- 500 gr of puff pastry dough
- 20 ml of water
- 10 g of Sugar
- 700 ml of milk cream
- 200 gr of powdered sugar
- 500 gr of frozen forest fruits
- 250 gr of Sugar
- 30 ml lemon juice
- 40 gr of Cornstarch
- 250 ml of milk
- 15 g of cocoa
- 10 gr of Coffee
- 40 g of sugar
- 5 ml of vanilla essence
- 50 gr of Chantilly Cream
- 20 gr of Caramel

Preparation
- To start, preheat the oven to 180° C.
- Then, we take the puff pastry, prick it with a fork and brush it with water all over the surface of the dough.
- Also, sprinkled with sugar.
- Bake at 180° C for 25 minutes until golden and crispy. We place it in a removable mold.
- Meanwhile, in a bowl we add the 200 g of powdered sugar to the heavy cream (700 ml) and beat with the electric mixer.
- Next step, we pour the whipped cream over the puff pastry in the mold and smooth the surface. We are going to reserve a little of the cream for the final decoration.
- Then, it goes straight to the refrigerator for 30 minutes.
- Meanwhile, in a pot, cook the frozen berries with 250 grams of sugar, lemon juice and cornstarch. Cook over medium heat until the mixture thickens and let it cool for about 10 minutes.
- Next, we pour part of the berry mixture over the cake with the cream and add the reserved cream on top.
- We continue with the other layer of the berry mixture and place it in the refrigerator for 30 more minutes.
- In another pot, heat the milk with the cocoa, coffee, 40 g of sugar and vanilla essence until it boils. Remove from heat and let cool for 10 minutes.
- Add the chantilly cream to the cooled milk mixture and pour over the baked and cooled puff pastry dough.
- Refrigerate for 30 minutes.
- Before serving, spread the berries over the chantilly cream and decorate with the caramel.
