Instead of pickling them in vinegar, she showed me how to prepare them in tazas, or ceramic jars, using a method that retains their fresh taste and crunchy texture.

Follow these step – by- step…Here’s how it’s done:

Ingredients:

  • Fresh cucumbers, preferably small and firm
  • Salt
  • Water

Instructions:

  • Begin by thoroughly washing the cucumbers to remove any dirt or debris. Trim off the ends, but leave the skin intact for added flavor and texture.
  • In a large bowl, dissolve salt in water to create a brine. The exact ratio of salt to water will depend on your personal preference, but a good rule of thumb is to use about 1-2 tablespoons of salt per quart of water.
  • Place the cucumbers in clean tazas or ceramic jars, packing them tightly to ensure they fit snugly.
  • Carefully pour the brine over the cucumbers, making sure they are completely submerged. You may need to weigh them down with a small plate or weight to keep them from floating to the surface.
  • Seal the tazas or jars with a lid or cover them tightly with plastic wrap.
  • Store the tazas in a cool, dark place for several weeks to allow the cucumbers to ferment and develop their flavor. Check them periodically and skim off any foam or scum that may form on the surface.
  • Once the cucumbers have reached the desired level of fermentation, they are ready to enjoy! Serve them as a refreshing side dish or snack, or incorporate them into salads and sandwiches for a burst of flavor.
