Servings: About 4

Ingredients:

  • 2 large onions, sliced into 1/4-inch discs
  • 1 cup almond flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional, for a spicy kick)
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • 2 cups shredded mozzarella or cheddar cheese

Directions:

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, combine the almond flour, paprika, garlic powder, cayenne pepper (if using), salt, and pepper.

Mix well.

Dip each onion slice into the beaten eggs, then coat it with the almond flour mixture. Make sure to coat the onion slice thoroughly.

Place the coated onion slices on the prepared baking sheet. Repeat with the remaining onion slices.
