Ingredients:
- 1 cup milk
- 2 tablespoons sugar
- 1 tablespoon corn starch
- 1 teaspoon vanilla extract
- 200g chocolate (dark or milk)
- ½ cup Greek yogurt
- Chopped almonds (optional)
Directions:
Prepare the Ice Cream Base:
- In a saucepan, combine the milk, sugar, and corn starch. Whisk until the sugar and corn starch are dissolved.
- Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring constantly.
- Once the mixture has thickened slightly, remove it from the heat and stir in the vanilla extract. Allow the mixture to cool completely.
Prepare the Chocolate Coating:
In a microwave-safe bowl, melt the chocolate in 30-second intervals, stirring in between, until smooth and fully melted. Alternatively, you can melt the chocolate using a double boiler on the stove.
Assemble the Ice Cream Bars:
- Once the milk mixture has cooled, whisk in the Greek yogurt until smooth and creamy.
- Pour the mixture into ice cream molds or small paper cups, filling them about 3/4 of the way full.
- If desired, sprinkle chopped almonds into each mold for added crunch and flavor.
Insert wooden popsicle sticks into the center of each mold and freeze until solid, at least 4 hours or overnight.
Coat with Chocolate:
- Once the ice cream bars are fully frozen, remove them from the molds.
- Dip each ice cream bar into the melted chocolate, allowing any excess chocolate to drip off.
- Place the coated ice cream bars on a baking sheet lined with parchment paper and return them to the freezer to set the chocolate coating, about 30 minutes.
Serve and Enjoy:
Once the chocolate coating is set, your homemade Magnum ice cream bars are ready to enjoy! Serve them as a refreshing treat on a hot day or as a delicious dessert after dinner.
